Ingredients (Best to use organic)

8 cups torn romaine

1 cup cucumber cut into bite-sized chunks

8 pitted Kalamata olives

4 plum tomatoes, sliced into eighths

2 slices red onions, separated into rings

Sliced pepperoncini (we use Jeff’s Naturals) to taste



1/4 cup veggie broth

2 Tbsp red wine vinegar

1/2 tsp. dried oregano

2 tsp. olive oil

1 tsp. sweetener (we use Just Like Sugar)

1/2 tsp. sea salt

1 clove pressed garlic

Pinch of cayenne


Combine salad ingredients in a large bowl. Blend dressing ingredients in a bowl or Pyrex measuring cup, mix well with a whisk, pour over salad, then toss and enjoy!
