1 favorite healthy pizza crust (we used Sami’s Millet Flax crust)

1-2 Tbsp. olive oil

1-2 large garlic cloves, minced

A few Tbsp. organic tomato sauce (we used Paesana Organic Tomato Basil)

Sliced black (or green) olives

2 handfuls fresh rocket (arugula) tossed with a bit of lemon juice, olive oil & sea salt

Drizzle of balsamic reduction


Balsamic Reduction:

Heat 1-2 cups organic balsamic vinegar over medium heat for at least 30 minutes until

vinegar is syrupy and reduced by half. If you like it a bit sweet, you can add some honey.


Spread crust with olive oil, then minced garlic. Add a few Tbsp. of tomato sauce and spread over all. Sprinkle sliced olives. Drizzle the balsamic reduction in a kind “S” pattern. Bake for 10 or so minutes, and top with the arugula. Magnifico!
